Shrimp preparation

  1. Wash shrimp with lime
  2. Add 1 tsp salt In a pan with hot oil
  3. Add shrimp and cook until brown
  4. Drain and grind, mash or roughly chopped shrimp in a blender or nutria bullet
  5. Set aside

  1. 1/2 tsp garam masala
  2. 2 tsp roasted geera/cumin
  3. 1 tbsp turmeric powder
  4. 2 tbsp Lala’s curry powder
  5. 6-8 tbsp green seasoning
  6. 1/4 cup of water and mix to a paste
  7. In the roughly chopped shrimp add 3-4 tbsp curry paste and mix well

Carilla/Karela preparation

  1. 5 pieces of frozen karela fully thawed
  2. In a pan with hot oil add karela and make sure you roll the pieces around in the hot oil. If you are using fresh karela it’s best to steam them out
  3. Add shrimp mixture to the centre of the karela and really press the filling in the karela well to avoid the filling from coming out while cooking

Cooking instruction

  1. In a pan with hot oil
  2. Add remainder of the curry paste
  3. Cook until it starts sticking to the pan
  4. Add 2 small onions finely chopped
  5. Add 1 tsp salt
  6. Add karela mix around in the curry
  7. Add coconut milk (2 cups)
  8. Cook until karela is tender and most of the liquid is evaporated

Enjoy with rice, roti or naan (Sharmin’s Kitchen)
