Caribbean Fruitcake (Jehancancook)

Ingredients
  • 1 1/2 cup all purpose flour
  • 1 cups sugar
  • 2 sticks butter, room temperature
  • 4 eggs
  • 1 tsp baking powder
  • pinch salt
  • 1/2 tsp nutmeg
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1 cup fruit mixture
Instructions

1. Preheat oven to 350 degrees.  Grease and flour  9 inch cake pan.  Set aside. In a bowl, mix flour, baking powder, salt, nutmeg and orange zest set aside.

2. Place butter and sugar in a large bowl and mix until fluffy and light in color.  Add eggs one at a time, mixing well after each addition to make sure egg is incorporated.  Please don’t rush this step, adding the eggs too soon or too many at one time can cause the mixture to  separate.

3. Next add vanilla extract and almond extract to mixture, mix until incorporated.  Add flour and fruit mix and mix just until combine.  Place into prepared baking dish.

4. Bake for 45-50 minutes.   Remove from oven and allow to cool.

5. You can add about 1 tbsp of rum over the top as soon as it out of the oven to enhance the rum flavour  (Jehancancook)
