Ingredients

3 cups shredded green cabbage

1 small cucumber, thinly sliced or julienned

1 cup shredded cheddar cheese

1/2 cup bacon bits, cooked and crumbled

1/2 cup ranch dressing (use your favorite brand or homemade)

Salt and black pepper to taste

Optional: extra bacon bits or chives for garnish

Step-by-Step

  1. Prepare the Vegetables
    Shred your green cabbage into thin strips and toss into a large mixing bowl. Slice or julienne the cucumber into matchstick-sized pieces for extra crunch and toss them in with the cabbage.
  2. Add Cheese and Bacon
    Sprinkle the shredded cheddar cheese and bacon bits over the veggies, saving a few bacon bits for garnish if you wish.
  3. Mix with Ranch
    Drizzle the ranch dressing over the cabbage, cucumber, cheese, and bacon. Using a large spoon or spatula, gently mix everything together until the veggies are well coated. Be careful not to over-mix; you want the slaw to stay fluffy and crunchy.
  4. Season
    Taste the mixture and add salt and pepper as needed, keeping in mind that bacon and ranch already add flavour.
  5. Assemble the Cups
    Scoop generous spoonfuls of the creamy slaw into individual small cups or ramekins. If using for party appetizers, lettuce cups or mini tortilla boats work great too!
  6. Garnish and Serve
    Top each cup with a sprinkle of extra  bacon bits and a few fresh chives or herbs if you like. Serve immediately for the best crunch.

What to Serve Creamy Bacon Ranch Slaw Cups With

These slaw cups make an outstanding side to grilled burgers, barbecue chicken, or pulled pork sandwiches. For a lighter meal, pair them with hearty  vegetable soups or a platter of grilled veggies. They’re equally delicious served as party finger food alongside mini sliders or spicy chicken wings. For drinks, try lemonade, iced tea, or a crisp, cold beer. The creamy, zesty flavors work well with almost any main or snack you can imagine!

Top Tips for Perfecting

  1. Use Fresh Cabbage: Pre-shredded bags are convenient, but shredding fresh cabbage gives the slaw better crunch and brighter flavor.
  2. Make It Ahead: You can mix the slaw base up to a few hours before serving, but add the ranch dressing right before you assemble so the cups stay crisp.
  3. Switch Things Up: Swap out cheddar cheese for pepper jack or mozzarella, or use diced turkey bacon or vegetarian bacon to suit your needs.
  4. Don’t Overdo the Ranch: Add ranch gradually until you reach your preferred creaminess. Too much dressing can make the slaw soggy.
  5. Serve Chilled: These cups taste best cold, so chill them for half an hour before a summer gathering or picnic.

Storing and Reheating Tips

Store leftover Creamy Bacon Ranch Slaw in an airtight container in the fridge for up to 2 days. The flavors meld and deepen, but the slaw can lose crunch over time. It’s best enjoyed fresh! If you need to make it ahead, store the mixed veggies separately and add ranch and bacon right before serving. Freezing isn’t recommended, as the vegetables can become watery after thawing.

To reheat any portion with bacon, warm gently in the microwave for 10-15 seconds to bring out the flavors—but remember, this slaw is best served cold! If your bacon bits lose their sizzle, crisp them quickly in a dry skillet before garnishing leftovers. (recipesfiber)
