Vegan Chili with Quinoa

Ingredients

  • 1 bag Success® Tri-color Quinoa
  • 2 tbsp olive oil
  • 1/2 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 jalapeno pepper, chopped
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 2 can diced tomatoes
  • 1 cup pecans, chopped
  • 1/2 cup vegan sour cream
  • 1/2 avocado, diced
Instructions
  • Spice things up in your kitchen with this delicious Vegan Chili with Success® Tri-color Quinoa. The perfect kick to weekday meals!

    Step 1

  • Prepare quinoa according to package directions.

    Step 2

  • In a large pot add olive oil over medium-high heat. Add onion, garlic, and jalapeno and sauté for 4 minutes or until vegetables have softened. Add chili powder and cumin, stirring to coat the vegetables.

    Step 3

  • Stir in the tomatoes and pecans and bring to a boil. Reduce heat to low and simmer for 20 minutes.

    Step 4

  • Serve the chili in a bowl over the quinoa. Top with vegan sour cream and avocado.
