RECIPE: COW FOOT SOUSE

Cow Foot Souse

Ingredients

Guyanese Quinches / Sweet Cassava Bread

4 lbs cow foot/cow heel

1 1/2 tbsp seasoned salt or table salt

1 tbsp bouillon

1 tbsp complete seasoning

1 tsp black pepper

1/4 cup vinegar

2 tbsp green seasoning

 

For the pickle

4 cups hot water

1/2 cup vinegar

1/4 cup lime juice

1 tbsp salt

1 tbsp sugar

1 tbsp bouillon

1 tbsp complete seasoning

1 tsp black pepper

1 large Cucumber

1 small red onion

1 small yellow onion

6 colored habernero peppers (or peppers of choice)

Chopped scallions

Chopped parsley

lime slices (optional )

Instructions

Using instant pot add some water just enough to cover the whole food

Add the seasonings

Add some vinegar

Add some green season

Add water, cover and allow it to pressure for about one hour. This is basically like a pickle, so we’ll be creating the pickle juice

Now add some hot water to a large dish and then add lime juice, salt, sugar, the seasonings, and start adding the vegetables.

So once we add all the ingredients, we’ll go in with the vegetables, and you want to mix it in. Make sure everything is well combined. and then we’ll start adding the cooked cover food

Garnish with fresh green onions and parsley

  

Notes

Cover and allow it to rest for about 6 hours or so for best results. If you eat it right away it will not taste good, it will be bland and the flavours will not get to marinate. You have to allow this to sit and once you eat it later it will be absolutely amazing.

Some people may use that water that they pressured the meat in, but I don’t.  I like to discard that and make my own pickle juice fresh. (Candy Tha Glam Cook)
